abstract

  • In the course of a taxonomic study on the mycoflora of processed meat products, five strains of a yeast of the genus Candida were isolated from different brands of Spanish sausages, "Salchichn." They could not be identified with any known species.The five strains represent a new species for which we propose the name of Candida iberica.The identification techniques used were based mainly on those described in The yeasts.
