  • The Institute of Food Technologist's (IFT) latest Authoritative Report describes microbial performance standards and other food safety criteria and clarifies their suitability in food inspection systems. Food safety is assured primarily by controlling microorganisms at the food source and selecting suitable raw materials. Performance standards need to be based on scientifically validated and verifiable data, which must continuously be improved. Multiple meaningful performance criteria may be necessary at different stages in the food system to achieve a desired Food Safety Objectives (FSO).
