  • The quality of foods is of primary importance to food industry and consumers. Evaluation of food quality is the key to ensure the quality of food products. The development of computer and electronics technologies provides strong support to fast, consistent signal measurement, data collection, and information analysis. In order to build a fast, objective method for food quality evaluation, food quality needs to be quantified to indicate the degree of good/bad of the quality. Food quality quantization is the key technique for objective, automated food quality evaluation. It provides a quantitative representation of food quality. This paper is to study the methodology and present practical applications of food quality quantization in realization of objective and automated food quality evaluation. After the study of methods of food quality evaluation, the procedure of food quality quantization for objective, automated food quality evaluation is described. Then, two examples of application development are presented from the food quality quantization point of view. Through this research, it can see that the development of the technique for objective, automated food quality evaluation stronly depends on the development of new techniques and methods from mathematics, statistics, computer science, and electronics for food quality quantization for effective sampling, data acquisition, data analysis, modeling, and classification and prediction.
